4 small free range egg whites
Big pinch of sea salt
2 1/2 cups of unsweetened fine shredded coconut
1 tsp. of vanilla extract or almond extract
1 Tablespoon of palm sugar
1/2 tsp. of liquid stevia
Instructions:
Whip egg whites with a big pinch of sea salt until peaks form.
Combine shredded coconut, palm sugar, liquid stevia, and flavoring.
Next gently fold coconut mixture into egg whites until combined.
Scoop approx. 1 tablespoon sized mounds with a spoon or ice cream scooper to make ball shaped cookies.
Place cookies on a lined baking sheet and bake at 325 degrees F for approx. 15 to 20 minutes.
Cool cookies and store in an airtight container.
This recipe makes 18 to 20 cookies with approx. 2 grams of carbs per cookie.
You can experiment with different sweeteners such as yacon syrup, lucuma powder, or honey.
You can even add in almond flour to add some depth of flavor to your coconut macaroons.
