Easy Greek Recipes
and A Greek Potato Recipe

Easy Greek Recipes include Keftedes which are Greek Meatballs. You can eat these with an Easy Greek Potato Dish or an Easy Greek Rice Dish.

A Greek Potato Recipe is usually made with ingredients such as fresh vegetables and Greek Olive Oil.

A Greek Rice Recipe can become a hearty side dish by adding lots of Fresh Veggies, Kalamata Olives, and Feta Cheese.

Keftedes Greek Meatballs can be made with a variety of meats such as beef, turkey, pork, or lamb and herbs like mint or oregano.


Greek Potato Recipe



Another Easy Greek Potato Recipe

Ingredeints:
  • 2 to 3 pounds of Russet or Red Potatoes (peeled)
  • 1/2 to 3/4 cup Red or Yellow Onion (finely chopped)
  • 2 to 3 tsp. of Dried Greek Oregano
  • 1/2 cup of Celery (finely chopped)
  • 4 to 5 Hard Boiled Free Range Eggs (chopped)
  • Sea Salt and Black Pepper
  • Juice of 2 Lemons or 1/4 cup of Red Wine Vinegar
  • 1/2 cup of Greek Extra Virgin Olive Oil
  • Bunch of Fresh Parsley (chopped and no stems)
Instructions:
  1. Cut peeled potatoes into cubes.
  2. Cook cubed potatoes in salted boiling water until tender.
  3. Drain and keep potatoes warm.
  4. In a large glass bowl, combine potatoes, celery, onion, chopped eggs, sea salt, pepper, and oregano.
  5. Add lemon juice or red wine vinegar and olive oil.
  6. Toss lightly and garnish with parsley.
  7. Can be chilled before serving.

Easy Greek Rice Recipe

Ingredients
  • 1 cup of Whole Grain Rice (cooked)
  • 1 cup of Fresh Spinach Leaves (no stems)
  • 1/2 cup of Cherry Tomatoes (cut in half and seeded)
  • 1/2 cup Red Onion (chopped)
  • 1/2 cup of Cucumber (seeded and chopped)
  • Bunch of your favorite Fresh Herbs (parsley, basil, mint, etc.)
  • Handful of Kalamata Olives (pitted & chopped)
  • 1/2 cup Feta Cheese (crumbled)
  • Juice of 1 lemon
  • 2 to 3 tablespoons of Greek Extra Virgin Olive Oil
Instructions:

Combine all of your ingredients and let sit in your refrigerator for 1 to 2 hours before serving.

Keftedes Greek Meatballs



Another Easy Greek Meatballs Recipe

Ingredients:
  • 1 to 1 1/2 pounds of Ground Meat
  • 1 small chopped Onion
  • Sourdough Bread for 1 cup Moistened Breadcrumbs
  • Whole Milk
  • Bunch of Freshly Chopped Mint Leaves
  • 1 Large Egg
  • 1 to 2 Cloves Minced Garlic
  • Sea Salt and Pepper to Taste
Ingredients for Cooking:
  • Unsalted Butter
  • Healthy Cooking Oil

Instructions:

  1. Cook onions in a saute pan with 1 tablespoon of butter.
  2. Cook until translucent and set aside to cool.
  3. Meanwhile, moisten sourdough bread (no crusts) with milk to make a cup of moist breadcrumbs.
  4. When onions have cooled add in the rest of your ingredients along with the 1 cup of moistened breadcrumbs.
  5. Mix with your hands and then form into small meatballs.
  6. Cook meatballs in your healthy oil turning the meatballs on all sides until they are brown in color.
  7. Remove meatballs from pan and place on paper towels to absorb any excess oil.
  8. Your meatballs can now be added to a sauce, eaten with a side dish, or even refrigerated until the next day.
