A Kombucha Tea Recipe

Food Fermentation health benefits include the benefits of probiotics. Fermented vegetables are filled with these "Friendly Bacteria".

Fermentation is a way of preserving food and can actually enhance and create more nutrients...such as increasing amino acid content.

Fermented vegetables like sauerkraut and kimchi are known for containing the benefits of probiotics which aids in digesting food.

Another one of the benefits of food fermentation is that it allows our bodies to absorb minerals and vitamins (in particular C), more effectively from foods.

Also a diversity of aromas and flavors are created from the fermentation process.

Benefits of Probiotics

  • Probiotics are live bacteria that you ingest and are considered to be "Beneficial or Friendly" bacteria
  • These bacteria pass into the digestive tract and enter the intestine, where they promote health
  • The friendly bacteria supply the digestive system with living cultures that are essential for breaking down food and assimilating nutrients
  • The benefits of probiotics also help to regulate the level of acidity in your digestive tract

Health Benefits of Fermented Vegetables

cabbages for making kimchi Kimchi is a spicy fermented cabbage dish that has a noticeable aroma and a sour/spicy taste from the food fermentation process.

The vegetables that go into kimchi are an important source of fiber. Kimchi is loaded with vitamins (especially vitamin C).

Garlic is used and helps with the absorption of B vitamins.

Another huge benefit of garlic is lowering your cholesterol.

Garlic is a great source of Allicin, which has antibiotic and anti-fungal properties.

Kimchi delivers "Friendly Bacteria" such as Lactobacteria and Bifidobacteria into your intestines.

Sally Fallon Kimchi Recipe

I got the idea for this Kimchi Recipe from Sally Fallon's Nourishing Traditions. It's in the food fermentation or Fermented Vegetables & Fruits section of the book.

1 Napa or Chinese Cabbage

1 Bunch Green Onions

1 Cup Grated Carrots

1 Tablespoon Fresh Grated Ginger

3 Cloves Minced Garlic

4 Little Red Hot Chili Peppers

1 Tablespoon Sea Salt

4 Tablespoons of Whey(made this by straining some good quality yogurt)

Place chopped vegetables and everything else in a big bowl and pound with a wooden pounder until you release some of the juices.

Put the kimchi into a glass wide-mouthed jar and press until juices rise to the top.

Fill the jar to about 1 inch from the very top and cap with a tight fitting lid.

Keep at room temperature for about 3 days and then move kimchi to your refrigerator.

Health Benefits of Drinking Red Wine

red wine Red Wine is fermented using the skin and seeds of the grape...therefore it has more antioxidants than white wine.

Most research seems to indicate that moderate red wine consumption may help protect against heart disease.

Red Wine is also known to have a positive effect on cholesterol levels.

What provides red wine with its health benefits are its antioxidants, especially........Resveratrol.

Resveratrol

  • Resveratrol has been demonstrated to be a potent antioxidant (more effective than vitamin C).
  • This potent substance has been demonstrated to have anti-clotting effects that prevent the formation of blood clots in the blood vessels.
  • Resveratrol may be the reason that the French people get away with such high fat diets....while consuming red wine.

The Health Benefits of Apple Cider Vinegar

Apple cider vinegar is made from apples and goes through two food fermentation processes.

The potassium present in apple cider vinegar can help to remove the excess water caused by too much sodium...which helps with blood pressure.

The potassium in apple cider vinegar also helps to reduce the toxic load of the body.

The malic and acetic acid present in apple cider vinegar helps to combat fungal and bacterial infections.

Malic acid also helps to dissolve deposits of uric acid, which form around the joints.

Apple cider vinegar contributes greatly to the breaking down of food in the body.

This vinegar speeds up metabolism and it can be a powerful aid in keeping your weight under control.

Studies have shown that eating vinegar with a starchy meal helps control blood sugar levels.

Unpasteurized apple cider vinegar seems to offer more health benefits than pasteurized vinegar products.

The Health Benefits of Kombucha

Kombucha is made from sweetened tea that has been fermented by a symbiotic colony of bacteria and yeast...which resembles a mushroom.

Kombucha is a part of Chinese History and was referred to as the "Tea of Immortality".

Many stories have been told about this fermented tea beverage and it was used under many names....and in many cultures.

Kombucha seems to aid the stomach to better digest food.

This beverage is also known to support the immune system and seems to help the body to expel toxins.

Easy Kombucha Tea Recipe

I love the idea of this Kombucha Tea Recipe!

It beats having to go out and find a SCOBY or Kombucha Mushroom in order to make Kombucha tea.

This is a Basic Kombucha Tea Recipe:

  1. Boil slightly less than a gallon of filtered water
  2. Add 7-8 black or green tea bags and steep for 10-20 minutes
  3. Remove tea bags and add 1 cup of organic white sugar
  4. Stir to dissolve sugar and let cool to room temperature
  5. Pour into gallon glass jar and add 1-2 cups of "Kombucha Starter" from the last batch along with a SCOBY
  6. Cover jar with breathable cloth and secure with a large rubber band
  7. Place jar out of reach of sunlight and where it will not be disturbed
  8. Kombucha tea will be ready to drink in about 9 to 14 days depending on the room temperature (ideal room temperature 78F)
  9. At this point you can start again. Just remember to save 1-2 cups of "Kombucha Starter" per new batch and each time you make kombucha tea you will end up with two Kombucha Mushrooms (they grow a new one during this food fermentation process)
  10. Make sure that you are careful not to contaminate your kombucha tea and if it looks weird - don't drink it!
