Ingredients:

  • 6 Tablespoons of Greek Extra Virgin Olive Oil
  • 2 Tablespoons of Lemon Juice or Your Favorite Vinegar
  • 2 Cloves of Crushed Garlic
  • 2 to 3 tsp. of Dried Oregano
  • Sea Salt and Pepper

Instructions:

  1. Whisk olive oil and lemon juice until incorporated together.
  2. Stir in the rest of your ingredients.
  3. Your dressing is now ready to be poured!

Basically, a Greek Salad is freshly cut cucumbers, tomatoes, onions, and peppers. And some people like to add a leafy green to their Greek salad.

Ingredients:

  • 2 to 3 cups of Whole Grain Pasta (cooked)
  • 3/4 to 1 cup of Greek Feta Cheese (crumbled)
  • 1/2 cup of Kalamata or Ripe Olives (pitted & sliced)
  • 1 cup each of Tomatoes, Mushrooms, and Red Bell Peppers (sliced)
  • 6 ounces of Pepperoni or Salami (sliced)
  • 1/2 cup of Greek Extra Virgin Olive Oil
  • 4 T. of Red Wine Vinegar or Apple Cider Vinegar
  • 1 to 2 cloves Garlic (crushed)
  • 1 to 2 tsp. of Oregano (dried)
  • 1 to 2 tsp. Fresh Basil (chopped)
  • Sea Salt and Pepper (to taste)

Instructions:

  1. Combine in a bowl or capped glass jar olive oil, vinegar, sea salt, pepper, and crushed garlic.
  2. Whisk or shake ingredients to blend together.
  3. Combine the other ingredients in a big bowl and toss in your dressing.
  4. Refrigerate for an hour or two before serving.
