Raw Cheese is Unpasteurized Cheese

Raw Cheese is Much more Digestible and Nutrient Dense than Pasteurized Cheese.

Unpasteurized cheese is usually made with raw milk from cows or goats. This imparts a different flavor than cheese made from pasteurized milk.

Grass-fed cheese offers you much more nutrition and health benefits over grain-fed.

Reasons to Eat Unpasteurized Cheese

  • Contains a much better balance of omega-3 and omega-6 fatty acids
  • Cheese from grain-fed cows is very high in omega-6 fatty acids, of which most people consume too much of due to the popularity of omega-6 vegetable oils

Safety Concerns

Pasteurization is only one part of infection control and a dairy which is kept clean and sterile should produce healthy milk and cheese.

Any reputable dairy is delighted to show guests around their facility, demonstrating the steps taken to reduce the risk of bacterially contaminated milk.

As cheese ages, it becomes more acidic and is safer to eat. Most cheese is aged for at least 60 days.

Not that Hard to Find

Most health food and Co-ops usually carry some type of cheese that is raw. You will usually even find different varieties of cheese such as mild cheddar, sharp cheddar, jack cheese, etc.

You should look into each company to see if their cheese is indeed raw, as some may not be as raw as you might think.
