1 cup of Raw Mixed Nuts (soaked for 8 hours in salt water)
1 cup of Buckwheat Groats (soaked for 8 hours)
1 cup of Pitted Dates (soaked for 1 hour in 3/4 of Freshly Squeezed Orange & Tangerine Juice)
1/4 cup of Finely Shredded Coconut (unsweetened)
Orange Zest to taste
1 tsp. of Vanilla Extract
Cinnamon to taste
Drain water from mixed nuts and buckwheat groats. Rinse nuts once and buckwheat a few times until water runs clear (you can also sprout the buckwheat if you so desire).
Combine soaked dates with vanilla, orange zest, and cinnamon. Blend in a high speed blender or food processor until desired consistency is reached.
Pour this mixture into a big bowl and add the buckwheat, shredded coconut, and mixed nuts (chop or pulse nuts lightly in a blender).
Mix until well combined by hand and put onto lined dehydrator trays. Spread to desired thickness or thinness.
Dehydrate at 110 degrees F until desired crunchiness is achieved (approx. 18 hours).
Note: Flip granola mid-way thru and remove liner.
