A Vegan Chocolate Cake Recipe

A vegan chocolate cake recipe can be just as decadent as any luscious chocolate cake that you have eaten in a fancy restaurant or on a special occasion.

You just have to adjust a few ingredients.  Also, have the right tools and tips to make raw desserts.

Then you can create your own raw chocolate recipes for a chocolate mousse or a decadent chocolate cake recipe. 

Raw Chocolate Recipes

Crust Ingredients:

  • Soaked & Dehydrated Raw Pecans
  • Melted Coconut Butter
  • Raisins
  • Sea Salt & Cinnamon
  • Fresh Vanilla Bean

This vegan chocolate cake recipe would make a great birthday cake for a raw foodist.

And you could easily substitute another nut for the crust and use another type of dried fruit for this raw chocolate recipe.

Cake Ingredients:

  • Ripe Avocado
  • Agave Sweetener (or Raw Honey)
  • Raw Cacao Powder
  • Filtered or Spring Water
  • Cashew Butter
  • Fresh Vanilla Bean
  • Melted Raw Cacao Butter

Vegan Chocolate Cake Recipe

Ingredients:

  • 2 tbsp. of Cashew Butter
  • 3/4 cups of Melted Coconut Oil
  • 1 tsp. of Vanilla
  • 1/2 cup of Raw Cacao Powder
  • 1/2 cup of Maple Syrup (or Raw Sweetener)
  • 3/4 cups of Ground Raw Almonds (first soaked & dehydrated)
  • Garnish:  Coconut Flakes

I would cut back a little on the sweetener and maybe add in a little more cashew butter for this recipe.

Recipe for Chocolate Mousse - Crust

Crust Ingredients:

  • Organic Walnuts
  • Organic Shredded Coconut Flakes
  • Organic Plump Dates (pitted)
  • Optional:  Pinch of Sea Salt

Nut crusts are a great alternative especially if you live a gluten free lifestyle.

And for your crust recipes, try using other nuts to make your crusts taste different - such as the buttery macadamia or try pecans.

After much trial and error, you'll know which nuts are your favorite nuts and which ones taste the best.

Part 1 - The Crust

Instructions:

In a food processor, blend walnuts with the shredded coconut flakes until crumbly. 

Then add in pitted dates with a pinch of salt and blend until a sticky texture or pie crust texture is reached.

BTW, I would almost always soak my nuts overnight in warm acidic water to help remove some of the phytic acid which tends to block minerals from being absorbed.

I would also dehydrate my nuts, so that they would be crispy again.  And this process helps to make nuts more digestible.

Recipe for Chocolate Mousse - Filling

Filling Ingredients:

  • Mashed Organic Avocados
  • Organic Medjool Dates (pitted & soaked in water for 1/2 hour)
  • Organic Raw Sweetener
  • Organic Vanilla Extract
  • Spring Water (for smoother texture)
  • Organic Raw Cacao Powder or Carob Powder (to taste)

As far as I know, agave syrup is not really raw and is actually a very processed sweetener.

There may be authentic raw agave syrup, so really investigate before using this sweetener.

Other options for a raw vegan sweetener are raw lucuma, raw coconut nectar, or yacon syrup.

Part 2 - The Filling

Instructions:

Blend ingredients in a food processor until a smooth and creamy texture is reached. 

Then pour filling into pie crust and chill in the refrigerator or freeze before serving.
