Vegan Muffins and
A Blueberry Muffin Recipe

Vegan Muffins include all time favorites such as a Chocolate Muffin Recipe and a Banana Muffin Recipe.

A blueberry muffin recipe can be made using Vegan Milks and various flours. There are gluten free flours, sprouted flours, and even low carb flours to try.

Make a chocolate muffin recipe to satisfy that chocolate craving that we all seem to get every now and then.

A banana muffin recipe can be made extra special by adding various nuts and spices like cinnamon.

Again, use your imagination and play around with various vegan ingredients to create tasty muffins.


Gluten Free Blueberry Muffin Recipe



Low Sugar Blueberry Muffin Recipe

Ingredients:
  • 1 cup of your favorite flour or flour mixture
  • 2 tsp. of aluminum free baking powder
  • 1/2 cup of mashed bananas
  • 1/8 tsp. of sea salt
  • 1 Tbsp. of coconut sugar
  • 1/2 tsp. of liquid stevia
  • 1 tsp. of vanilla extract
  • 1 to 1 1/4 cup of thin coconut milk or other vegan milk
  • 3/4 cup of frozen blueberries (preferably wild blueberries)
Instructions:
  1. Sift flour and baking powder.
  2. Add sea salt and coconut sugar to sifted ingredients and mix together.
  3. Stir in coconut milk, mashed bananas, vanilla, and liquid stevia (stir until blended).
  4. Then add in your frozen blueberries and gently mix.
  5. Spoon into lined or oiled muffin pans and fill until 3/4 full.
  6. Bake at 350 degrees F for approx. 30 to 40 minutes.
  7. Cool on a wire rack.
  8. Makes 10 to 12 muffins

Vegan Banana Muffin Recipe



Important Tips!

I would use coconut oil in place of canola oil for a much healthier vegan muffin!!

I would also use coconut or palm sugar instead of turbinado sugar. Coconut sugar is not as sweet and that makes it better for your blood sugar levels.

Also, using sprouted flour and gluten free flours may be a better way to go than using the standard wheat flour.

Play around with various nuts and spices to enhance your banana muffin recipe.

Love the use of a high speed blender to make a very smooth banana consistency for your muffins.

Low Sugar Chocolate Muffin Recipe

Ingredients:
  • 1 cup of your favorite flour or flour mixture
  • 2 tsp. of aluminum free baking powder
  • 1/2 cup of mashed bananas
  • 1 Tbsp. of raw cacao powder
  • 1/8 tsp. of sea salt
  • 1 to 1 1/4 cup of thin coconut milk or other vegan milk
  • 1 Tbsp. of coconut sugar
  • 1/2 tsp. of liquid stevia
  • 1 tsp. of vanilla
Instructions:
  1. Sift flour, baking powder, and cacao powder.
  2. Mix all of your dry ingredients together.
  3. Add coconut milk, mashed bananas, vanilla, and liquid stevia into the dry mixture and stir until smooth.
  4. Spoon into lined muffin tins and fill approx. 3/4 full.
  5. Bake at 350 degrees F for approx. 30 to 35 minutes.
  6. Cool on a wire rack.
  7. Makes 10 to 12 regular sized muffins
