Easy Coconut Recipes

Easy coconut recipes can include a lava coconut cake recipe for those special moments in time - like dessert.

Paleo Coconut Cake Recipe - Lava Cake

Ingredients:

  • 1/4 cup Coconut Oil
  • 3 oz. of Dark Chocolate

Melt and stir together.

  • 1/4 cup Coconut Sugar
  • 1 Egg Yolk
  • 1 Whole Egg
  • 1/4 tsp. Vanilla Extract
  • Pinch of Sea Salt

Beat ingredients for about 2 minutes.  Then slowly pour beaten egg mixture into the melted chocolate while stiring.

  • 2 Tbsp. of Grassfed Chocolate Whey Protein Powder

Stir protein powder into cake batter. 

More Instructions:

Pour cake batter into 2 greased ramekins and spoon in 1 Tbsp. of Almond butter into the center of each lava cake.

Cover with a little more cake batter - the ramekins should be about 3/4 full.

Bake paleo coconut cake recipe at 400 degrees F for about 10 minutes.

Take out of oven and let it cool for at least a minute before trying to remove.

Low Carb Coconut Flour Pancakes

Ingredients:

Separate 5 room temperature eggs and put in separate bowls.

Beat egg whites to soft peaks and set aside.

  • 1/2 cup of Warmed Coconut Oil
  • 5 Egg Yolks
  • 1 Mashed Banana
  • 1 tsp. Organic Vanilla Extract

Whisk wet ingredients together.

  • 1/2 cup of Coconut Flour (or a little less)
  • 1/4 tsp. of Powdered Stevia
  • Pinch of Sea Salt
  • 1 Tbsp. Cinnamon
  • 1/2 tsp. Baking Soda

More Instructions:

Mix the dry ingredients with the wet ingredients.  Then fold in the whipped egg whites until incorporated.

Spoon batter on a greased griddle heated to 350 degrees F.

Flip pancakes when edges start to brown.

Stevia is a zero calorie sweetener that is used to add a sweet taste to your foods.  You can find stevia in liquid form or in a powdered form at most grocery stores.

Adding a banana to your coconut flour pancakes will add a little sweetness as well.

Paleo Coconut Ice Cream Recipe - Mint Chocolate Chip

Ingredients:

  • 1 Can of Coconut Milk
  • 3 Egg Yolks
  • 1/4 cup of Coconut Nectar
  • 1 tsp. Organic Vanilla Extract
  • 1 tsp. Organic Peppermint Oil

Put cooled ice cream mixture into your ice cream machine. 

And add in 1 cup of chocolate chips during the last 5 minutes.

Instructions:

Put ingredients into a pot and bring to a low boil.  Then remove from heat and strain ice cream mixture into a bowl.

Cool and chill for about 2 hours in refrigerator.

If you want to make a more raw coconut ice cream recipe, you would make your own fresh coconut milk and just use raw pastured egg yolks instead of cooking them.

I personally use raw eggs yolks all of the time to make my ice cream recipes.  I just don't feel the need to cook any more.

Easy Coconut Macaroon Recipe

Ingredients:

  • 6 Egg Whites
  • 3/4 cup Maple Syrup
  • Pinch of Sea Salt
  • 3 cups of Unsweetened Shredded Coconut Flakes

This is an easy coconut recipe that uses a coconut product that you will be able to find at just about any grocery store these days.

Instructions:

Whip egg whites until soft peaks form and then add in sweetener and whip a little longer. 

Then add in a pinch of salt and whip for a little longer.

Fold in the shredded coconut and spoon mixture onto a cookie tray.

Bake coconut macaroon recipe at 400 degrees F for 10 - 12 minutes.
